According to the article the remains are ethylene glycol. Thus they are probably after the carbon inside polyethylene. Probably not suitable for a low carb diet.
I just found this article from back in 2015: popsci.com – Mealworms Can Happily And Safely Eat Styrofoam. Apparently they are quite safe to eat etc. Go wormy friends. Also, I just set up a kilo of them in a first attempt at a breeding colony.
And, in their natural state, are good eating. Sweet and juicy. I doubt the plastic eating variety would be as tasty.
