https://obsproject.com/ is a pretty remarkable piece of open source recording software for Windows, Linux and MacOS. It is incredibly easy to quickly set up a recording. You can record to disk, or stream to a huge number of streaming services. Multiple sources are supported, and you can also record a specific desktop window – which is the part that I was looking for.
